This 35 year old Port Ellen is a masterpiece of the 30th anniversary of Signatory Vintage is bottled. Distillation was started in 1982 and the whiskey was bottled in 2018. The maturation takes place in a refill sherry butt and this ties nicely into the corporate mainstream of Port Ellen. The aroma is full and smoky, which also hints of tar and spices are provided. The flavor is extremely complex and combines with peat layers of fruit and hints of sage. It is advisable to give the whiskey a little time in the glass, so that it is more open. The finish is long, reminiscent of vanilla, salt and peat.
