Isle of Jura 19 years the Paps is a worthy closing of five whiskeys that are a tribute to the island. This single malt is the oldest of the bunch and is named after three famous mountains: The Sacred Mountain, The Mountain of the Sound and The Mountain of Gold. Together they form The Paps and they tower high above the landscape. Maturation takes place in barrels of American oak and then finished on Pedro Ximenez (PX) sherry casks that have previously 40 years old PX contains. The complexity which yields these after-ripening to the Isle of Jura Dad, is an unprecedented quality. The smell is strong and combines gingerbread, ginger, vanilla and balsamic vinegar. In the mouth come syrupy keys of pear, fig, and roasted walnuts forward.
